Fisherman’s Risotto

Ingredients :
600g of rice,
1kg of squid, cuttlefish, octopus and shrimp mixture.
500g of mussels
500g clams
300g peeled tomatoes
1/2 glass of wine
Olive oil
Garlic
Parsley
Salt, pepper

Thoroughly wash cuttlefish, squid, octopus, shrimp, mussels and clams.
Let the molluscs open in the boiling oil, keeping aside their juice first. Then filter the juice with a colander and set aside.
In a saucepan, sauté the garlic in the oil, add the tomatoes and the wine, stir all the mixture ; after which you add the squid, octopus and cuttlefish by letting them take their flavor and then the shrimp. While they cook, pour the juice of the molluscs, which will be added at the end, with parsley and salt.
Season the rice just drained.
